Egg and Hot Smoked Salmon Pie

Smoked salmon is a great alternative to bacon. Just like bacon, the smokiness of Aoraki’s Hot Smoked Salmon combines beautifully with eggs. Enjoy our take on the kiwi classic; bacon & egg pie.

Ingredients

1 pack of Aoraki Original Artisan Hot Smoked Salmon

1 Packet of pre-rolled savoury short pastry

1 dozen eggs

4 Individual pie tins (for single serve, not the family pie size)

Salt & pepper to taste

Method

Step 1

Line the pie tins with pastry

Step 2

Add 2 to 3 eggs and 1/4 of the smoked salmon

Step 3

Season lightly with salt & pepper to taste

Step 4

Place pastry on top of the pie and bake at 200°C for approximately 30 minutes (cooking times may vary depending on your oven. Keep an eye on the oven so the pastry doesn’t burn)

Step 5

Serve with the minted pea dressing (see recipe below)

Mint & Pea Dressing

Combine in a food processor:

1 Cup peas (cooked & chilled)

2 Tablespoons avocado oil

Juice of 1/2 lemon

Salt

1 Dessert spoon chopped mint
