
One-Pot Hot Smoked Salmon & Broccoli Orzo
Creamy, comforting and ready in just 30 minutes, this One-Pot Salmon & Broccoli Orzo is the perfect fuss-free meal for busy weeknights. Made with our Aoraki Original Hot Smoked Salmon, tender broccoli and creamy orzo, it's packed with flavour. A simple, wholesome dinner the whole family will enjoy.
Ingredients
1 tbsp olive oil or butter
1 onion, finely diced
3 garlic cloves, minced
250g orzo
750ml chicken stock
250ml milk
1 medium head broccoli, cut into small florets
1 pack Aoraki Original Hot Smoked Salmon, flaked into large pieces
Freshly ground black pepper
Method
Step 1
Heat the oil in a large sauté pan or pot over medium heat. Add the onion and cook for 5 minutes until softened.
Step 2
Stir in the garlic and cook for 30 seconds.
Step 3
Add the orzo and stir for about a minute to lightly toast it.
Step 4
Pour in the chicken stock, little by little. Bring to a gentle simmer. Add in the milk.
Step 5
Cook for about 8 minutes, stirring regularly so the orzo doesn't stick.
Step 6
Stir in the broccoli and continue cooking for another 5–6 minutes until the broccoli is tender and the orzo is creamy. If it becomes too thick, add a splash more stock or milk.
Step 7
Gently fold through the flaked Aoraki Original Hot Smoked Salmon and plenty of black pepper. Cook for just 1–2 minutes to warm the salmon through.
Step 8
Taste and season if needed. Finish with some Parmesan if using.
