There is nothing quite like a good toasted sandwich and if you follow these tips we think you’ll find you’ll nail it every time. Firstly you must start with good bread. A white sourdough is great as it crisps up nicely and holds its shape well. Secondly a mix of cheeses is vital. Mozarella for the stretch and Tasty for the bite. Ingredients

1 Aoraki Zingy Salmon Spread

4 slices sourdough bread

Butter

2 tablespoons olive oil

1 red onion, sliced into rounds

1/3 cup grated tasty cheese

1/3 cup grated mozzarella cheese

2 good handfuls rocket

Method

Prep Time: 15 minutes

Cook Time: 15 minutes

Step 1

Spread the bread with butter.

Step 2

Heat the olive oil in a heavy-bottomed frying pan and fry the onion until soft and translucent.

Step 3

Heat a toasted sandwich maker. Spread 2 of the pieces of bread on the un-buttered side with salmon spread. Sprinkle the cheese over the spread, top with the onions followed by the rocket and then the second pieces of bread, butter side up.

Step 4

Toast the sandwiches until golden brown then cut into two and serve.
