Kumara Butter Toast & Cold Smoked Salmon

The dense sweet character of kumara makes a delicious spread for wholegrain toast. It combines effortlessly with the subtle sweet smoke of Aoraki Cold Smoked Salmon.

Ingredients

1 pack of Aoraki Cold Smoked Slices 180g

2  Oven Baked Kumara (instructions in the method sections)

½ cup of Cream

1 tbsp Avocado Oil

1 tbsp of Tart Apple Syrup

4 slices thick Wholegrain Toast (crusts cut off)

Method

Baking your kumara

Step 1

Pre-heat your oven to 200°C

Step 2

Scrub your kumara, then place in the oven for 20-30min depending on the size of the kumara

Preparing the dish

Step 1

Scoop the baked kumara from their skin while still warm and add to a food processor. Alternatively you can whisk in a bowl but will suffer a few small lumps.

Step 2

Process until smooth then add the apple syrup, oil and cream. Season with salt at end.

Step 3

Butter the toast and spread the kumara spread liberally on top and top off with Aoraki Cold Smoked Salmon Slices.
