Our cold-smoked salmon brings a savoury depth, with its silky texture balancing the freshness and colour of the fresh vegetables. Each ingredient carries its own auspicious meaning, but the noodles are the foundation: a hope for a long, prosperous life enjoyed in good company.

Ingredients

1 cup red cabbage, shredded

1 cup daikon, julienned

1 cup carrot, julienned

1 cup cucumber, julienned

1 cup fresh coriander

1 pack of Aoraki Original Cold Smoked Salmon

1 /2 cup crispy noodles

1/2 cup soy sauce

30ml sesame oil

30ml lemon juice

10ml sugar

Method

Step 1

Arrange veggies on a large plate. Place salmon in the centre.

Step 2

Whisk together the sauce ingredients.

Step 3

Drizzle the sauce over the veggies and finish with a generous handful of crispy noodles on top.

Step 4

Just before serving, use chopsticks to toss the salad together.
