Mini Smoked Salmon Quesadillas

Crispy, cheesy and packed with flavour, these Mini Smoked Salmon Quesadillas are a quick and easy snack the whole family will love. Perfect for lunchboxes or a simple bite on the go.

Ingredients

4 tortilla wraps

1 pack Aoraki Cold Smoked Salmon

4 tbsp Aoraki Smoky Spread

1 cup grated cheese

Method

Step 1

Spread a thin layer of Aoraki Smoky Spread over half of each tortilla.

Step 2

Top with pieces of Aoraki Cold Smoked Salmon.

Step 3

Sprinkle generously with grated cheese.

Step 4

Fold each tortilla in half and press gently.

Step 5

Heat a non-stick frying pan over medium heat.

Step 6

Cook each folded tortilla for 2–3 minutes per side, until golden and crisp and the cheese has melted.

Step 7

Remove from the pan and allow to cool slightly.

Step 8

Cut each quesadilla into 4–6 wedges or cut out different shapes with cookie cutters.
