Ingredients

8 large portobello or button mushrooms

Zingy Salmon Spread

¼ cup breadcrumbs

1–2 tsp olive oil (optional, for drizzling)

Fresh herbs (parsley, chives, or dill), for garnish

Salt and pepper, to taste

Method

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Gently remove the stems from the mushrooms and place the caps on a baking tray.

Step 3

Spoon the salmon spread evenly into each mushroom cap, filling generously.

Step 4

Sprinkle breadcrumbs over the tops of the filled mushrooms.

Step 5

Bake in the preheated oven for 15–20 minutes, or until golden and bubbling.

Step 6

Remove from the oven, season lightly with salt and pepper, and sprinkle with fresh herbs before serving.
