
Zucchini Foldover Wrap with Cold Smoked Salmon
Light, fresh, and simple, this Zucchini Foldover Wrap & Cold Smoked Salmon recipe combines tender baked zucchini, creamy Zesty Salmon spread, and delicate Cold Smoked Salmon for a beautifully balanced dish. Ingredients
1–2 zucchinis, thinly sliced lengthways (use a mandolin or vegetable peeler)
100g Aoraki Cold Smoked Salmon
100g Aoraki Zesty Salmon Spread
1/2 cup of grated cheese
Salt and cracked pepper to taste
Bunch of rocket leaves
Olive oil (for brushing zucchini slices)
Method
Step 1
Prep the zucchini: Preheat oven to 200°C. On a lined baking tray, lay the zucchini ribbons side by side to form a flat sheet.
Step 2
Season lightly with salt and pepper, sprinkle over the grated cheese, and drizzle with a little olive oil.
Step 3
Bake for 10 minutes, until just tender and the cheese is lightly melted. Set aside to cool slightly.
Step 4
Assemble the fold over: Once cooled, spread a generous layer of Aoraki Zesty Salmon Spread across the zucchini sheet.
Step 5
Top with rocket leaves (or your choice of fresh greens) and place slices of Aoraki Cold Smoked Salmon evenly across the surface.
Step 6
Starting from one end, gently roll the sheet into a log, keeping the filling tucked in as you go.
Step 7
Garnish and serve by placing the seam-side down and slice into portions if desired. Serve chilled or at room temperature — ideal as a fresh starter or a light winter lunch.
